Grilled Caribbean Chicken Salad

I never turn down free food, so when Organic Girl asked me to try out their Five Happiness Salad Blend, I was all over it!

This delicious blend is a combination of baby bok choy leaves, baby red chard, tango, mizuna, baby arugula, baby spinach, baby green chard, baby green romaine and baby green oakleaf lettuce and comes in a 100% recycled clamshell. Organic Girl even washes them 3 times before packaging them so you don’t have to!

I’m not much of a salad maker so I was at a loss for what to do with all of this. I didn’t want to make the typical asian salad usually associated with Bok Choy, so I took a different approach and came up with the most amazing Caribbean Chicken Salad recipe. This perfect combination of fruits and veggies has a sweet, earthy taste to it and the perfect amount of crunch. I always have to include crunch to a salad, otherwise I feel like I’ll be hungry again in an hour.

SALAD
1 Clamshell of Organic Girl Five Happiness Blend
1.5 Cups frozen corn cooked in garlic and olive oil
1 Container of grape tomatoes, cut in quarters
Mandarin oranges (drained)
Cut pineapple (drained)
Plain tortilla strips
Chopped cilantro (optional)
Diced jalepenos (optional)

DRESSING to taste
Olive Oil
Honey
Lime Juice
Dijon Mustard
Apple Cider Vinegar
Salt

GRILLED CHICKEN marinate for an hour or more for best flavor
2 chicken breasts
1/4 cup orange juice
Salt
Pepper
2 cloves garlic
Gourmet Garden Chili Pepper Paste
Gourmet Garden Ginger
1 Tbsp olive oil
1 Tbsp lime juice

    I would definitely go with ‘optionals’ for the extra zest, besides it follows one of the Mexican rules: cilantro and jalapenos have to go along with tortillas! (they just one half of the salsa, right?)
